Fennel is a great addition to add zip to many veggie juices, but don’t get too enthusiastic. Not everyone will appreciate the clean licorice flavor; so, just like other stronger tasting vegetables; it’s good to start light so taste buds have time to adjust.  
Picking Perfect Produce
Look for fennel with both stems and bulb attached. The plant should be white or pale green and, just like celery, the stalks firm and crisp. Fresh fennel will have a fragrant aroma of anise or licorice.
