I am going to share a secret. When I come across some off-season oranges or melons that are less then ideal, a scope of frozen concentrated pineapple juice works wonders, bringing to life even the most jet-lagged fruit. An added slice of fresh pineapple is even better.
Picking Perfect Produce
Choosing an optimum pineapple may take some practice. It ought to have a strong, sweet aroma. Look for a large, plump, heavy fruit with dark, golden-colored skin. The center leaves should easily pull out. Summer is prime pineapple season because the sun is at its strongest. Jet-shipped or jet-fresh are more expensive; they have been flown from the field only a day or two before we buy them. Most pineapples are shipped by sea and are often weeks old by the time they reach your grocer’s shelf.
Storing Your Produce
As with most tropical fruit, pineapples do not continue to ripen after picking. Store up to 5 days at room temperature or, once cut, refrigerate up to a week.
