Red Pepper Juice

One cup of red pepper has 317% of your daily need of the powerful antioxidant, vitamin C, and almost 100% of your daily need of vitamin A.
Known by many names like capsicum, sweet pepper or chili pepper, peppers are thought of as a vegetable but are really a fruit. This versatile food is great in salads and can be stuffed, roasted, or stir-fried, but really shins when juiced. Most common is the green pepper, which is simply an unripe red pepper. But if you are looking at maximizing taste and nutrition, go red.

Preparing for Juicing
Don’t be shy; you can juice seeds, stem and all. You will be pleasantly surprised how much juice comes pouring out from just one pepper.
I have spent over twenty years juicing thousands of pounds of produce and tried just about ever juicer on the market. I can confidently say that our Juice Nut Top Pick Juicers are the very best in workmanship, warranty, juice yield and juice quality. I’m nuts about these juicers!
Red Pepper Juice Tips
As a teenager, working in the produce department at Safeway, it was my job to top off all the shelves with fruits and vegetables. Instead of piling new produce on top of the old, we practiced rotation, stripping the older, less-fresh produce off the shelf, adding the new, then piling the older on top. It took a little longer but ensured that buried veggies and fruit would not go rotten and eventually get discarded. So you can guess what I do when looking for the freshest, best produce. The digging may be slightly embarrassing, but like all treasure, it’s worth the effort.
Picking Perfect Produce
Look for smooth, firm, non-waxed peppers. Again, so much is in the color. The best peppers are dark red, firm, unblemished and heavy, with no soft spots.
Storing Your Produce
Will keep in refrigerator for one week.
Taste Combos
It wasn’t until a few years after my first juice fast that I tried adding a red pepper to my juice. I always choose the less expensive green variety. After that first mouthful, I have never gone back. Nutrition aside, the contribution of that sweet rich flavor a ripe red pepper adds to a veggie melody is well worth the extra cost.
